4 green onions, finely chopped 1 small nectarine or peach, finely chopped 1 TBS chopped fresh mint 1/4 tsp ground coriander Pinch of cumin Salt and Pepper 4 ounces goat cheese 8 large grape leaves in brine, drained Olive oil, for brushing * In a small bowl, place onions, nectarine, mint, and spices. Season with salt and pepper and stir until combined. Cut cheese into 4 slices. * Rinse and dry grape leaves. Lay 2 leaves on top of each other, overlapping, and brush leaf tops with oil. Place 1 slice of cheese on each leaf pair. Top with nectarine mixture. Carefully fold leaves over cheese until completely covered. Secure with toothpicks. * Preheat broiler. Brush leaf packages with oil. Place on a baking sheet. Broil 3 - 4 minutes on each side until leaves are slightly charred. Remove toothpicks and eat up.
