Bruscetta


Bruscetta makes a perfect appetizer. It's cheap and easy to make. My eccentric Italian cooking teacher, May MiTano, from City College gave us this bare bones recipe. Just do a lot of tasting 'til it tastes good to you, 'cause she didn't write down any amounts. Good luck and good eating.
Roma tomatoes, seeded and diced
Basil, chopped
Parsley, chopped
Olive Oil
Garilc
Green onion, chopped
Balsalmic vinegar
Salt
Parmasean
Frech bread

* Cut bread into thin slices, rub with olive oil, and toast in 
   oven until crunchy. 

* Mix tomatoes, basil, green onion, parsley, olive oil, balsalmic
   vinegar, and salt in a bowl. 

* Rub toasted french bread with a clove of garlic. Top with 
   tomato mixture. Garinish with parmasean cheese.
