I love caesar salad more than most people love chocolate. What I discovered is that this world is overrun with awful caesar salads. I decided to take the matter into my own hands, and learned how to make my own dressing. Thanks to Brad and Em for having me over to their house for the dressing instructional. We made an awesome salad with baby romaine, parmesan, and homemade croutons.
1 coddled egg
2 garlic cloves, roughly chopped
3 - 4 anchovies
1 tsp. worstechire sauce
Several grinds of black pepper
Juice of a small lemon
Olive oil from anchovy can
* Coddle egg by poking a tiny whole in the top of a raw egg.
Then bowl it for 2 minutes.
* Break open and scoop insides out into a blender. Add everything
and blend until smooth. Add 1/4 olive oil slowly. Blend until creamy.
