Indonesian Fried Bananas


2/3 cup coconut milk
1/2 cup all purpose flour
1/2 cup rice flour
1 TBS sugar
1 tsp baking powder
1/4 tsp salt
2 eggs
Lots of canola oil for deep frying
6 large ripe bananas
1/2 sesame seeds (optional)
1/2 shredded coconut (optional)

* In a bowl, combine flours, sugar, baking powder, and salt, and mix well. 
   In a separate bowl, lightly beat eggs, then stir in coconut milk until
   well blended. Stir into flour mixture and beat with a wire whisk until
   smooth. Cover and refrigerate for 2 hours.

* Get your the oil in your deep fryer or pot good and hot (375 degrees). 

* Peel bananas and cut into thirds. Dip banana into batter and coat
   completely. ( Roll in sesame seeds or shredded coconut if you want) 
   Lower into the hot oil, turning frequently during cooking
   to avoid burning. After about 3 minutes, remove from oil with a 
   slotted spoon. Let banana degreases on paper towels or a cookie rack.

* Sprinkle with powdered sugar and serve hot. For a super yummy treat
   serve with ginger or coconut ice cream.
