Lemon Slice Pie


1 1/2  cups sugar
2 TBS all-purpose flour
1/4 tsp salt
4 TBS butter, melted
3 eggs, well beaten
1/4 cup water
1/4 cup fresh lemon juice
3 large meyer lemons, peeled, seeded
   and sliced as thin as possible
1 egg white, beaten
Powdered sugar

* Preheat oven to 425 degrees

* In a large bowl, combine sugar, flour, and salt. Beat in the butter and eggs.
   Stir in water, lemon juice, and lemon slices. Pour into a pie shell.

* Bake 15 minutes. Reduce heat to 350 and cook for 25 minutes more.
