Sardine Tomato Olive and Egg Salad





MAKES   6-8   SERVINGS


Can you feel the sea breeze blow across your face 
as you reach for one more serving of this 
Mediterranean inspired salad? You can test out your 
artistic talents arranging the ingredients on the plate. 
The nice thing about this salad is that the guest can 
grab the things they want off the platter and leave
the things they're not so fond of, like sardines.

1 head butter lettuce
20 sardines
5 hard boiled eggs, sliced
3 tomatoes, sliced in quarters
1 cup kalamata olives
1 lemon, cut into wedges
1 red onion, finely sliced
Olive oil 




1. Line a plate with butter lettuce leaves. 
Place all the ingredients on the platter. 
2. Drizzle with olive oil and serve.
